Copper gaskets offer better thermal conductivity than all-synthetic gaskets. Copper is an excellent conductor of thermal energy. This is why it's used to make heat exchangers and heat sinks. Copper gaskets exhibit similar characteristics.
Copper gaskets work great in dry-deck applications; that is, engines that don't run coolant or lubricant through the gasket. As already noted, they're especially strong in engines with multiple stages of nitrous or boosted applications.
Copper washers are designed to seal up to 2000 lbs of hydraulic pressure, rubber washers might hold 200 if you're lucky. The copper is actually a gasket, not a washer, it only looks like a washer. It is made of "dead soft" copper which has been anealed to be as soft as copper gets.
